Duna del Sol process

At Duna, we preserve an artisanal production process in the town of Santos Degollado, within the municipality of San Juan Bautista Guelache, Oaxaca, under the guidance of our maestro mezcalero, Óscar Ramírez. Unlike many mezcales from Matatlán, the microclimate of Guelache does not affect the agave itself, but rather the fermentation and production processes. The cooler temperatures, altitude, and air conditions of the region influence the activity of wild yeasts, resulting in unique aromas and flavors that set our mezcal apart.

Espadín Agave

For our production, we use 6- to 7-year-old Espadín agave from San Pedro Apóstol, a neighboring region renowned for the exceptional quality of its plants.

Pit oven cooking

The agave hearts are slow-cooked in a traditional underground stone pit for 4 to 5 days, developing their sweetness and smoky depth.

Tahona Milling

Once cooked, the agave is crushed with a tahona—a traditional stone wheel pulled by a motor—a process that takes between 8 and 12 hours.

Fermentation

Fermentation takes place in open-air wooden vats for 9 to 12 days, allowing the region’s wild yeasts to naturally interact with the mash, imparting complexity and unique layers of flavor.

Distillation

The liquid is distilled twice in copper stills, ensuring purity, balance, and refinement.

Dilución y Envasado

Once the mezcal is ready, it is transported directly from the palenque to a facility across the road, where laboratory tests are conducted to guarantee that it meets both regulatory requirements and the highest quality standards. It is then carefully diluted to reach 40% alcohol by volume. This choice is intentional: we want Duna Mezcal to be both accessible and enjoyable for a wide range of consumers, while preserving its artisanal character.

Finally, the mezcal is bottled under rigorous quality standards, in a process led and largely operated by women, highlighting our commitment to inclusion and empowerment within the mezcal industry.
